The outer skins of fruits and vegetables are filled with flavour and vitamins

To tackle food waste, we need to consume the whole vegetable. .Chef Anand Kumar“In bars, fresh ingredients are used to make concoctions as this makes for better finished drinks. “Honestly, it will not take much additional time from your usual kitchen routine. Either people are not aware of this or they are too busy to spend extra time in their kitchen,” mentions Arina. And chefs should find ways to add this in their menu. That’s it,” says Arina, adding, “Though it makes a difference, at home the food quantity is very small.Where are chefs looking for inspiration? inside the waste! Root-to-stem or trash cooking is the new trend that aims to tackle food wastage and introduce a new creative spark for gastronomy experts. “It is sad to see how much food is wasted. Don’t throw away any leaves, greens and stalks. “Unless it is not really good for health, nothing should be wasted. This results in much wastage. And I believe that all parts are edible and good for health. “Innovative or centralised menus (if more than one food serving outlets), an award programme for wastage control measures, small bin day where the working section will have small bin to throw wastage.”An effective way to spread awareness is by restaurants and chefs coo “The outer skins of fruits and vegetables are filled with flavour and vitamins. “We can go back to our roots (literally) and begin making the fabulous Andhra cucumber pickle in which the peels are left on, the watermelon rind chutney, or the ash gourd chutney… all ingenious ways to use it, I say! And delicious to boot!” says Kavita. There was a generation that used everything that was edible in their cooking.”While there are various names for this concept, the one Chef Ajit Bangera of ITC Chennai dismisses is ‘trash cooking’. Mumbai-based chef and mixologist Arina Suchde recommends this concept in today’s scenario. “Most people don’t think about what goes into waste. They made sure that nothing went waste. Maximum fibre and antioxidants are packed in these discarded parts.Educating consumersSupporters of root-to-shoot cooking say that educating producers and consumers about nutritional properties and cooking techniques is vital.According to artisan baker and Master Chef Season 5 finalist, Shipra Chenji, a vegetable should be treated as a whole entity. These days, due to their busy lives, people don’t care much about what is going to waste,” Arina says. “Not only in restaurants, at homes too one should be careful about what is thrown away.”Many shy away from the process as they think it is time-consuming.

They are a rich source of dietary fibre, also known as NSP (non-soluble polysaccharides) like hemi-cellulose, pectin and more. Whom to criticise here?” Arina asks. We can be a little more conscious and get back to our roots. Also, keep in mind — the smaller menu is but the best. And it is not a big task either. Chef Ajit believes that wasting food is a crime. Thanks to all the peeling and scraping, we end up using less than half of most vegetables and fruits we buy to eat and cook. Plus, they are universally low in calories, sugar, and fats; and free from cholesterol, and add satiety and help cut down overall food intake (read help in weight control),” says Kavita.“Only few people are bothered about their health and the environmental aspect. This results in huge wastage as bartenders usually extract the pulp or desired flavours from the fruits or vegetables and the rest is usually discarded,” says mixologist Himanshu Desai. “I grew up in a household where a separate ghiya o.”Kavita DevganAnand suggests ways through which hotels can control food wastage. But later, due to busy lifestyles and misconceptions about nutrition, people forgot the importance of using all parts of the produce. Consumers usually forget the fact that the peels and leaves we throw away are loaded with nutrients.Uncooked food forms a large proportion of waste generated across the globe, Food Machine Manufacturers contributing to a growing environmental crisis. In hotels, the aesthetic appeal of food presentation is considered very vital. “I don’t understand why they call it trash cooking. You can also have a brief write-up about the wastage control in preparing a particular dish.In India, new-age restaurants as well as established ones are slowly warming up to the idea, with a stringent eye on reducing food waste. But let’s just focus on three aspects — less awareness, mindless and fancy cooking. According to the UNDP, around 40 per cent of waste generated in India is food waste.Getting startedThe beginner should be trained properly on how to process and cut fruits and vegetables, and continue the trend until it becomes a part of their routine.“The thick peels, roots, stems and seeds that we trash are loaded with nutrients that are very hard to find. But in hotels, if they can incorporate this concept, it will definitely make a difference. There should be a deliberate effort to lessen the food garbage,” Shipra says.Nutritional gainsRoot-to-shoot cooking is a brilliant way of ensuring macro and micronutrients in your diet

Scientists have developed a new technique to 3D print food that can allow users to cook according to their preferences. They also demonstrated that their platform and optimised methods can turn carbohydrate and protein powers into food with microstructures that can be tuned to control food texture and how the food is absorbed by the body.3D printing of food works much like 3D printing of other materials in that layers of raw material are deposited to build up a final product.

Now, you will be able to report safety concerns of a packaged food product or served food at a restaurant instantly. The easy-to-use application will require only the licence number printed on the food package after which the app will search for manufacturer details in the FSSAI database and provide the details to the consumer who can verify the authenticity by matching the data.

The Food Safety and Standards of Automatic Cookie Making Machine Factory India (FSSAI), in their new mobile application launched on Sunday, will have a feature by which the food concerns raised by a consumer will be routed to the food safety officer (FSO), a designated officer or the state food commissioner for necessary action.

This is a true reflection of Prime Minister Narendra Modi’s vision of “sab ka sath sab ka vikas”.Discovered some “strange” and “unexpected” object in your packaged food and you do not know whom to approach Here is a good news. The FSSAI app, which is a free mobile application developed will help consumers verify registration/ licence of the food manufacturer, will further help in ensuring safety standards of the product. The consumers can then report their concern to the authority concerned. According to officials, this will further help the food outlet to improve their hygiene standards.

Nadda, who launched the “safety app”, told this newspaper that it is an “intiative to bring the in economic mainstream the unorganised sector of food vendors by providing them official recognition, dignity and skills. Union health minister J. The consumers will also have an option to provide hygiene rating of a food outlet through the App. This will help in creating awareness of safe food among the consumers too.In a bid to help manufacturers provide safe food to its consumers the App also provides food safety tips on packed food and served food. This would benefit the street food vendors to establish their brand enhance their income while also benefiting the consumers by promotion of hygiene and quality of the food served by the street food vendors.P. “This will also help the FSSAI to identify weak areas of hygiene and will help the outlet to improve their food safety standards”.

From the toxic rule of corporations that is killing
ارسال شده در پنج شنبه 25 آذر 1400برچسب:, - 5:37

Food security and food sovereignty requires that the government procure food grains from farmers at fair prices based on just MSP, to provide food to the poor.I started Navdanya, and Bija Swaraj, the seed freedom movement in 1987 when I first heard of GATT and patents on seed. The lead US negotiator at the start of the Uruguay Round who shaped what became the WTO Agreement on Agriculture, was Dan Amstutz a former vice-president of agribusiness giant Cargill. We need to “transform” our food and agriculture system through a Jaivik Kranti — a revolution for life — to stop farmers’ suicides, hunger, malnutrition and disease. We are in a period of transition. As the Taitreya Upanishad tells us “everything is food”.

The CAG had assessed a Rs. Corporate imperialism goes hand-in-hand with government corruption. It is time to make a transition from corporate imperialism that is killing us, our farmers and life on earth, to earth democracy that sustains life. 1,200 crore fraud in the yellow pea dal import when UPA imported two million tons.

Cancun failed. But there is another transition at work. end-of Tags: farmers suicide, global hunger index, indian patent act. In 1998, the same year when BT cotton was illegally introduced by Monsanto, Cargill and Co assaulted our healthy edible oil economy, manipulating a ban on desi oils like mustard to flood the Indian market with unhealthy GMO soya oil and palm oil. After the Dunkel Draft of the GATT was leaked in 1991, I travelled the length and breadth of India to inform farmers about TRIPS and the Agriculture Agreement. The NDA government is importing six million tons. More farmers will commit suicide.James Enyart admitted that Monsanto and pharmaceutical giants wrote the Trade Related Intellectual property rights (TRIPS) agreement to create monopolies on seeds and medicines. As many as five lakh kacchi ghanis were shut. The ecological crisis, the agrarian crisis, the food crisis, the health and nutrition crisis, the crisis of democracy and sovereignty are not separate crisis. We have witnessed the illegal spread and failure of GMOs like BT Cotton. They are one. The fake dal is only seven per cent protein compared to our chana and tur with 25-35 per cent protein. The spread of junk food has led to an epidemic of non-communicable chronic diseases. A 10,000-year-old agroecology tradition of growing and giving good food as the highest dharma is being destroyed by an industrial globalised agricultural model which came from the war and has unleashed a war against the earth, our farmers and our bodies.

The Sanitary and Phytosanitary (SPS) agreement was drafted by the global food processing industry to displace sovereign food safety laws, criminalise local food systems and impose junk food on the people of the world through pseudo safety laws. No democratic society and no democratically elected government should allow its citizens to go hungry.Every rule of WTO that affects our daily bread was written by the Poison Cartel including Monsanto, the Merchants of Grain led by Cargill, and the junk food industry led by Pepsi, Coca Cola and Nestle. They want to force the Indian government to import toxic degraded GMO corn, soya, rice and wheat, sprayed with Monsanto’s Carcinogenic Round Up, traded by Cargill, for our PDS. In this war waged by the corporate empire, our small farmers, our annadatas, are on the frontline in defending our national security and food sovereignty. The language of food sovereignty, Anna Swaraj, emerged as a response to WTO — that farmers, communities, societies, countries have the right and the duty to grow good food in ecological ways for health and well being for all. We organised rallies in Hospet in Bengaluru, in Delhi to say “No” to the Agreement on Agriculture. The US has challenged India’s public stockholding for food security in the WTO. We organised a “sarson satyagraha” to protect our indigenous oilseeds and edible oil economy.A few years ago, a fake “yellow pea” dal started to get imported from Canada displacing our diverse dals, which we call the “The Pulse of Life”.

The scam has to be bigger. From the toxic rule of corporations that is killing the Earth, small farmers and people to the emergence of new paradigms and practices based on care for the Earth, the last species, the last child.Let 2018 be a year when we sow the seeds of our food sovereignty through swadeshi bija and swadeshi bhoj. Most suicides are in the cotton area, and most debt is for illegal royalty collection because Article 3J of the Indian Patent Act does not allow patents of seed. The web of life is a food web. The agrarian crisis will deepen. Cash transfers replacing public procurement will achieve what corporations are seeking. We need to “reform” the WTO rules of corporate globalisation. As in Seattle, we, as Diverse Women for Diversity, continue to say “the so-called “free-market” system is indeed a global war system, based on violence against nature, humanity, especially women and children. The last three decades of my work have been shaped by creating democratic and just alternatives to unfair and undemocratic rules of GATT/WTO, which were written by the corporations, for creating monopolies over our seed and food.India’s National Food Security Act is an important law that is supposed to guarantee the Right to Food to the last Indian citizen.”The Seattle China Waffle biscuit machine Manufacturers Ministerial failed because of people’s power. And people, especially the poor, pay the price with their very lives.Farmers’ rights to fair prices are thus structural to the Food Security Act. 2017 is giving way to 2018. Hong Kong failed. These corporate driven reforms have of course “transformed” India but in a destructive way. When it is ruptured by chemicals and poisons that come from war, and rules of “free trade” that is a war declared by corporations against the earth and humanity, biodiversity is wiped out, farmers are killed through debt, and people die either because of hunger or because of cancer, diabetes, heart problems, hypertension and other environment and food related chronic diseases. And they are connected through food. Every fourth Indian is hungry, every second Indian child is malnourished, and India now is at 100th rank on the Global Hunger Index. More than 300,000 farmers have committed suicide since 1995. More children will die of hunger. Two decades of corporate driven globalisation has destroyed the biodiversity and cultural diversity of our indigenous food systems, the health of people and the planet. Corporate imperialism cannot coexist with the “rights of mother earth” and human rights. At the Buenos Aires Ministerial MC, 11 northern countries tried to “pink wash” WTO to try and present corporate rule as women’s liberation. This was the message we took to Seattle. These unnecessary imports imposed by corporate cartels are a theft of our farmers’ livelihood and our nutrition. And now the Buenos Aires Ministerial has failed.Everyone is paying a very high price for corporate greed and dictatorship and collusion of corporate states to spread the toxic empire of corporations in the name of “reforms”. But corporations find new undemocratic ways to impose and spread their empire

There’s a lot of food trends right now
ارسال شده در چهار شنبه 31 شهريور 1400برچسب:, - 10:36

He was upbeat about the responses received for this fest, which is its fifth edition.”Sarthak Kathuria, a customer and a blogger believes that everyone can share their opinion as most have a social media account irrespective of the food knowledge one possesses.“They’re (food trucks) here to stay and I am pretty sure they’re going to evolve with time and I really hope they do because we get to spend a good evening with friends and experiment with so many food joints here”, he concludes in response to the future of food trucks. Whether one wanted to have a simple pizza or one craved a pancake or waffle; if one craved oriental or a simple kathi roll, it was all there. Along with that, the public could have tried their hand VR, Bungee, Bull Riding, Segway & ATV rides in a zone called ‘Experience Zone’.”A still from the event“We target the family crowd, the school going crowd as well.“When we started this even this, it was essentially a food truck festival. The food trends change constantly in Delhi at one moment, momos are trending then suddenly waffles are trending and it may be difficult to curate festival menus.” She however feels that with the advent of social media, it is not that easy to launch oneself as a baker or a chef. With an aim to find a somewhat solution to this dilemma, a three day food festival titled, ‘Horn OK Please - Delhi’s Happiest Food Festival’ was organised by Digant Sharma, founder, So Delhi. However the fest was not just a plethora of food stalls. They were essentially the thing in Delhi-NCR. “The genuine reviews that you get out of people by the word of mouth, I think that’s gaining more attention”, he says when asked about the trend of people reviewing things online.

“There’s a lot of food trends right now. When it is the weekend and taste buds crave for something new and fresh rather than the monotonous dal-chaawal.” We try to keep up with digital and social trends to ensure that people get to try products which are trending on social media on ground as well”, he says in response to keeping up with the food trends.

“Most food festivals feature eateries and dishes that have skyrocketing prices, and with the 5th edition of the festival, we aim China packing machine Factory to offer delicious food and more at pocket-friendly prices”, he says. Especially now with the instagram world, right now I feel is more than the food trends, we are focusing to have something that tastes beautiful and looks even more beautiful because everyone’s taking a snap and posting it online”, she says in response to how difficult it is to keep up with the dessert trends.”Kishneet Sethi, chef, Sugar Loft feels that much of the crowds coming here in the last five editions of this fest are young. end-of Tags: horn ok please, grub campus. The organizers themselves curate the menu for the fest, he says adding, “We get over 2000 applicants for exhibitors to showcase their products over here and we ensure that there is a good mix of exhibitors.Horn OK Please- Delhi’s Happiest Food FestivalComing to the food side of the fest, there were food carts and food on wheels also known as food trucks that served food at reasonable rates and food stalls that served items that one could not have even imagined. There are cries of the public for something different but it has to be within a budget.

My favourite thing is to experiment with fruits especially seasonal fruits. These are people who want to come out during the day and Delhi weather as you know after March gets a bit warm so we need to drive footfalls because we have so many exhibitors who are showcasing and we want as many people to try their food”, he says in response to why this festival is hosted in this time of the year.
